Allspice is the perfect name for a spice reminiscent of the full fragrance and aroma of cinnamon, cloves, nutmeg, and, some say, a pinch of pepper and juniper berries. Whole allspice is used mainly for pickling, but it's also a flavorful addition to gravies, broths, stews, spiced ciders, and meat, fish and vegetable marinades. (Scandinavians use allspice to marinate raw herring, and to preserve barrels of fish in transport.) Be sure to remove the whole berries before serving the dish. Kosher.
