Thyme oil is divided into two types, a red, unrectified oil and a white, rectified oil. Red Thyme oil is the crude distillate and White thyme oil is produced by further re-distillation or rectification. Thyme is basic to most cuisines. Thyme is also a significant medicinal herb.
